Blueberry Sausage Coffee Cake

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup sugar
  • 2 eggs
  • 8 ounces sour cream or yogurt
  • 1 pound pork sausage
  • 1 cup blueberries
  • 1/2 cup chopped pecans

Instructions:

  1. Set oven to 350 degrees

  2. Grease 13x9 pan

  3. Cook and drain sausage, set aside

  4. Mix the flour, baking powder & soda, set aside

  5. Beat together: butter & sugars

  6. Add eggs to the butter & sugar mixture

  7. Add sour cream or yogurt

  8. Add the flour mixture

  9. Fold in the sausage & berries

  10. Pour into pan

  11. Bake for 35-40 minutes
