Amish Breakfast Casserole
Ingredients: 1 lb. sliced bacon, diced
1 med. Sweet onion
6 eggs, lightly beaten
4 c. frozen shredded hash brown potatoes
2 c. shredded mild cheddar cheese
1-1/2 c. small curd cottage cheese
1-1/4 c. shredded swiss cheese
Directions
In large skillet, cook bacon and onion until bacon is crisp, drain. Mix together the remaining ingredients, stir in bacon mixture. Transfer to a greased 9 x 13 pan. Bake, uncovered at 350 degrees for 35-40 minutes or until eggs are set and bubbly. Let stand 10 minutes before serving. Serves 8 - 10
Blueberry-Molasses Muffins
Ingredients: 1 Box (Krusteaz) Wild Blueberry mix w/ Blueberries (drained)
1/2 cup Fresh Blueberries
1 Egg
1/3 C. Molasses
1/3 C. Milk
1/2 Tsp. Ginger
1/4 Tsp. Nutmeg
1/4 Tsp. Cinnamon
1/3 C. Oil
Directions
In a large bowl add all ingredients, except the blueberries. Mix together well. Gently fold in the blueberries. Grease muffin tins with non-stick spray. Fill Muffin cups evenly with batter, about 1/2-3/4 full. Bake at 400 degrees for 18-20 minutes. Sprinkle with powdered sugar and serve with butter. Makes 12 muffins.
