Directions: Slice French bread into 16 1/2-inch slices and place 8 slices in a large baking dish. Set the other 8 pieces aside. Core apple and thinly slice into 8 pieces. Place 1 apple slice on each piece of French bread in baking dish. Cut 8 1/8-inch slices of brie, removing waxy outer coating, and place 1 slice on each apple-topped piece of bread. Place remaining 8 slices of bread on top of brie.
Mix eggs, milk, 1/8 tsp. nutmeg, and cinnamon well. Pour egg mixture over brie and apple sandwiches, turning the sandwiches to insure coating well on both sides. Cover and refrigerate overnight, or for at least 1 hour.
Preheat griddle to 350 degrees. Lightly butter the griddle and place sandwiches brie side down, turning once after cheese has begun to melt. Toast should grill to an even golden brown. Serve immediately, topped with freshly grated nutmeg and orange zest. Serve with maple syrup.
